Curried mince with lentils, and many variations on the theme of meat, veggies and legumes, are a great lunch option, particularly as the weather turns colder. And doing a bulk cook up for the week ahead is a great way you’re organised. It’s more economical too than buying your lunch every day.
Here’s a very simple one I do often.
Curried Mince with Lentils Recipe
Makes 4 generous serves, approx 400 calories per serve.
600gm beef mince
1/2 red onion
1 large zuchinni
1 heaped teaspoon of any curry paste
2 x 420gm cans of lentils
1. Cook the mince on a low heat in a deep-sided frying pan until browned. No need for oil.
2. Add chopped onion and grated zucchini. You could add any other veggies you like, including tinned tomatoes and grated carrot for added sweetness.
3. Add curry paste and stir thoroughly.
4. Drain and rinse lentils then add to pan.
5. Serve and eat!
